Knoxx InnovationsINNOVATIONS
An R&D chef and a food manufacturing customer evaluating food samples alongside a food scientist developing formulations in an application-development laboratory

Our R&D network

One brief. Two locations. One connected development team.

Connected R&D capability across Australia and India, combining customer collaboration, culinary direction and food-science development.

  • Customer collaboration
  • Culinary development
  • Food science
  • Co-creation
  • Scale-Up

How the network works

Customer insight in Australia. Food science in Bengaluru.

The two locations work together throughout development. The Innovation Studio provides direct customer collaboration and culinary interpretation, while the Innovation Nexus provides dedicated food science, formulation and technical development capability.

Customer brief
Our R&D Chef works directly with the customer to understand the product, application, eating experience and commercial requirement.
Initial sensory assessment
Reference products, existing products or early concepts can be tasted and evaluated to establish the desired sensory direction.
Culinary brief
The R&D Chef translates the customer requirement into a clear culinary brief covering the intended flavour, texture, appearance and eating experience.

Technical brief
The food scientist converts the customer requirements, manufacturing constraints and agreed product objectives into a technical development brief.
Formulation and prototyping
Formulations are developed, prototypes are prepared and technical variables are evaluated against the culinary and manufacturing brief.
Technical refinement
Each development round builds on sensory feedback, application performance and agreed technical criteria.

One project. Two lenses.

Culinary intent meets food science.

Culinary brief

Led by the R&D Chef.

What should the finished food taste, feel and look like?

Flavour, texture, appearance, eating experience and application

Technical brief

Led by the Food Scientist.

What must the formulation and process achieve to produce that result reliably?

Ingredient functionality, process compatibility, consistency, technical performance and commercial scalability

The formulation has to satisfy both.

Co-creation

Development moves in both directions.

Prototypes and ideas can be evaluated with the customer, refined by our R&D Chef and Food Scientist, and developed through multiple iterations until the preferred direction is established.

Customers can participate in person or digitally depending on the project and stage of development.

Why the model works

Culinary understanding and technical depth stay connected.

Closer customer collaboration
Customers can discuss briefs, taste products and co-create closer to market in Australia.
Dedicated technical development
The Bengaluru team provides focused food science and formulation capability around the project.
Continuity through development
The R&D Chef and Food Scientist remain connected so sensory intent and technical development do not drift apart.

How R&D connects to production

R&D that strengthens the manufacturer's own operation.

The Blacktown and Bengaluru teams develop the formulation, component or technical system. The manufacturer continues to own and operate the finished-product process, integrating inputs developed by Knoxx Innovations where they add value.

Our R&D network adds technical capability around the customer's manufacturing operation, it does not need to take that operation over.

When a project needs more

Bring in specialist expertise when required.

Where a project requires capabilities outside our core team, Knoxx Innovations can coordinate selected external laboratories, process specialists or other technical expertise around the development program.

Specialist testing
Selected external analytical or technical laboratories.
Process expertise
Process or engineering specialists where manufacturing requirements demand it.
Other technical specialists
Additional expertise relevant to the particular project.

Building the network

More customer access as we grow.

Over time, we intend to expand application and co-creation access closer to the customers and manufacturing markets we serve.

One technical standard. More ways to collaborate.
